Baked Amish Oats
This is the most requested recipe at The Lancaster Bed &Breakfast. It is so easy to prepare. If you don't like wet oatmeal you will love this, it is like eating a warm oat and fruit muffin.
By adding all the wet and dry Ingredients together then filling individual ramekins or small dishes or even a 9"x13" baking dish for serving options, you have only to bake the dish and you have a wonderful starter. Almost any fresh or dried fruit with the exception of strawberries to the oats. I have added fresh peaches and then served a small scoop of creme fresh to create peaches and cream baked oats. You can even add chocolate chips for the kids. This will be a family favorite!
2 cups old-fashioned rolled oats (steel cut Irish oats will not work)
1 tsp baking powder
1/2 tsp kosher salt
3/4 cup fresh blueberries (blackberries, raspberries, peaches ect.)
1 1/2 cups heavy cream or half and half
1/3 cup 100% pure maple syrup
1 large egg blended
1 1/2 Tbsp butter melted unsalted or unrefined coconut oil
2 Tbsp pure vanilla extract
Cooking oil spray I do not recommend non-stick cooking sprays.
Preheat the oven to 375°
Using small ceramic ramekins, spray each inside with canola oil spray
Combine baking powder, salt, oats and berries in a large bowl. Carefully mix using a silicone spoonula as not to bruise the fruit.
In a separate medium bowl combine maple syrup, milk, vanilla, and the melted butter last. Using a stick blender whip egg before adding to liquids, mix ingredients together and well with the stick blender. Make sure that you are fully breaking the egg white and yoke into an even custard consistency.
Pour the wet mixture into the dry mixture and stir gently to combine.
Scoop the oat mixture into the prepared ramekins, filling each cup about ¾ full.
Make sure each has a wet top with the remaining liquid.
Bake for 25 minutes until set and wet ingredients are fully absorbed. Can be held in a 165° warm oven for up to an hour if loosely draped with parchment.
Serve hot with a shot of heated half and half on the side, top with a few berries or fruit.
