Fresh Berry Yogurt Parfait
Greeted with smiles and ooo's every time we serve our Fresh Berry Yogurt Parfait at breakfast. What could be easier.
We start with a quality non-fat Greek yogurt the choices are truly endless these days. Having spent a great deal of time in Greece and loving this dish to start each day I wanted to serve a near version of my memories. Greek yogurt is not sweet and tends to be a full dense creamy cheesy taste. It is always offered with a good local honey at its side to pour over the top. Almost any fresh diced fruit works but this recipe is for a variety of berries. Enjoy!
1/4 cup Fresh Blueberries washed and dried
1/4 cup Fresh Blackberries rinsed and dried
1/4 cup Fresh Raspberries most often pre-washed
1/4 cup Fresh Strawberries washed and dried, tropped and cut in half or quartered
1/2 cup Non-fat Greek Yogurt
This is really a tough one. Using a small 1-2 oz. food scoop or tablespoon scoop one scoop into the bottom of small dishes or trifle dishes. Lightly tap each dish into the palm of your hand to even out the scoop of yogurt in the bottom of the dish. Toss in a couple of each berries onto the yogurt. Repeat the scoop of yogurt and fruit and light tap. Repeat one more time putting the remaining fruit and top with a small scoop of yogurt and top with a small sliced and splayed strawberry.
Either drizzle or squeeze a small stream of quality honey onto the fruit or have it available at the table with a honey dip or squirt bottle. Use a quality local honey.
The fruit you use will give you endless possibilities a few fruits don't work with yogurt but don't afraid to try.
